Ingredients
2 cups diced fresh tomatoes
1 cup canned black beans, drained and rinsed
1 cup canned black-eyed peas, drained and rinsed
1 cup sweet corn
1 large avocado, diced

1/4 cup chopped fresh cilantro
1 jalapeño, finely diced
1/3 cup diced bell peppers
1/4 cup olive oil
3 tablespoons fresh lime juice
1 tablespoon red wine vinegar
1 teaspoon honey
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Wash and dice all fresh vegetables into small, even pieces.
2. Rinse and drain the black beans and black-eyed peas thoroughly.
3. In a large bowl, combine tomatoes, beans, peas, corn, onion, peppers, jalapeño, and cilantro.
4. In a separate bowl, whisk together olive oil, lime juice, vinegar, honey, and spices.
5. Pour the dressing over the mixture and gently toss to combine.
