Ingredients

1 lb ground beef

1 small onion chopped

3 cloves garlic minced

1 packet taco seasoning

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp cumin

1/4 tsp black pepper

1/2 tsp salt

1 can black beans drained and rinsed

1 can pinto beans drained and rinsed

1 can kidney beans drained and rinsed

1 can corn drained

1 can diced tomatoes

1 can diced tomatoes with green chilies

2 cups beef broth

1 tbsp tomato paste


Instructions

1. Prepare all ingredients by chopping onion, mincing garlic, and draining beans and corn.

2. Cook ground beef in a large pot over medium heat until browned; drain grease.

3. Add onion and cook until soft, then stir in garlic.

4. Mix in taco seasoning, chili powder, paprika, cumin, salt, and pepper.

5. Add diced tomatoes, tomatoes with green chilies, and broth.

6. Stir in beans and corn.

7. Bring to a boil, then simmer for 20–30 minutes.

8. Adjust thickness and seasoning to taste.

9. Serve with desired toppings.


Notes

Brown the meat well before adding liquids for maximum flavor.
