Ingredients
1 cup rolled oats
1 cup all-purpose flour
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 cups fresh strawberries, diced
1 tablespoon cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt.
3. Add melted butter and vanilla extract, then stir until the mixture becomes crumbly.
4. Press about two-thirds of the oat mixture firmly into the prepared pan.
5. Bake the crust for 10 minutes to help it stay firm.
6. In another bowl, mix strawberries, granulated sugar, cornstarch, and lemon juice.
7. Spread the strawberry filling evenly over the warm crust.
8. Sprinkle the remaining oat crumble over the strawberry layer.
9. Bake for 30 to 35 minutes, until golden and bubbly.
10. Cool completely before slicing into bars.
Notes
Use ripe but firm strawberries so the filling stays bright and does not become watery.
Let the bars cool completely before slicing for clean, firm pieces.
For extra flavor, add chopped almonds, pecans, or a light vanilla glaze on top.
