Ingredients

2 cups fresh spinach

1 ½ cups whole-milk ricotta cheese

3 large eggs

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic

½ small onion

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon nutmeg

1 cup cherry tomatoes

1 tablespoon olive oil

½ teaspoon dried oregano

fresh basil leaves


Instructions

1. Heat olive oil in a pan over medium heat, cook onion until soft, then add garlic and spinach until wilted. Cool and squeeze out moisture.

2. Preheat oven to 375°F (190°C) and grease a baking dish.

3. In a bowl, whisk ricotta, eggs, Parmesan, and half mozzarella until smooth.

4. Add salt, pepper, and nutmeg, mixing well.

5. Fold in the spinach mixture gently.

6. Transfer mixture to baking dish and spread evenly.

7. Top with remaining mozzarella cheese.

8. Toss cherry tomatoes with olive oil and oregano, then place on top.

9. Bake for 35–40 minutes until golden and set.

10. Let rest for 10–15 minutes before slicing.

11. Garnish with fresh basil and serve.
