Ingredients

2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

¼ cup granulated sugar for rolling

Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

3. In a large bowl, beat softened butter and sugar until light and fluffy.

4. Add egg, egg yolk, and vanilla extract, mixing until fully combined.

5. Gradually add dry ingredients into the wet ingredients and mix until a soft dough forms.

6. Cover and chill the dough for at least 30 minutes.

7. Scoop dough into balls and roll each ball in granulated sugar.

8. Place dough balls onto prepared baking sheets about 2 inches apart.

9. Bake for 9 to 11 minutes until edges are lightly golden and centers remain soft.

10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Do not overbake the cookies because they continue cooking after leaving the oven.

Chilling the dough helps create thicker cookies with soft and chewy centers.

Use room-temperature butter and eggs for smoother dough and better texture.
