Ingredients
1 medium cauliflower head
2 cups white vinegar
2 cups water
1 tablespoon salt
1 teaspoon sugar
3 garlic cloves
1 teaspoon red chili flakes
1 teaspoon mustard seeds
1/2 teaspoon turmeric
1 teaspoon black peppercorns
1 cup mixed vegetables (carrots, bell peppers, or green beans)
Instructions
1. Wash and cut the cauliflower into bite-sized florets
2. Optional: blanch florets in boiling water for 1–2 minutes then cool in ice water
3. Sterilize glass jars thoroughly
4. Heat vinegar, water, salt, and sugar until dissolved
5. Add garlic and spices into jars
6. Pack cauliflower and vegetables tightly into jars
7. Pour hot brine over vegetables until submerged
8. Remove air bubbles and seal jars
9. Cool to room temperature then refrigerate
10. Let marinate 24–72 hours before serving
