Ingredients
2 large boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon onion powder
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup chicken broth
3 tablespoons Dijon mustard
3 tablespoons fresh lemon juice
1 lemon, sliced
2 tablespoons fresh parsley, chopped
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1. Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, paprika, and onion powder.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat until hot.
3. Place the chicken in the skillet and sear for 5 to 6 minutes on each side until golden brown and nearly cooked through.
4. Remove the chicken from the skillet and set aside on a plate.
5. Lower the heat slightly and add the minced garlic to the skillet. Stir for about 30 seconds until fragrant.
6. Pour in the chicken broth and scrape the browned bits from the bottom of the skillet using a wooden spoon.
7. Whisk in the Dijon mustard, lemon juice, and remaining butter until the sauce becomes smooth.
8. Add the lemon slices and allow the sauce to simmer for 2 to 3 minutes.
9. Return the chicken and its juices back to the skillet and spoon the sauce over the top.
10. Simmer for another 5 to 7 minutes until the chicken is fully cooked and tender.
11. Sprinkle fresh parsley over the chicken before serving.
12. Serve hot with rice, pasta, mashed potatoes, or roasted vegetables.
Notes
Use freshly squeezed lemon juice for the brightest and freshest flavor.
Do not overcrowd the skillet while searing the chicken or the chicken may steam instead of browning.
Allow the chicken to rest for a few minutes before slicing to help keep it juicy and tender.
