1 green bell pepper, diced
2 cloves garlic, minced
1 packet taco seasoning
1/3 cup water
1 can diced tomatoes with green chilies, drained
1 cup corn, drained
1 can black beans, rinsed and drained
8 ounces cream cheese, softened
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
2 cups cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
2 tablespoons fresh parsley or cilantro, chopped
1 jalapeño, sliced optional
Instructions
1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish.
2. Press the biscuit dough evenly into the bottom of the prepared baking dish.
3. In a large skillet over medium-high heat, cook the ground beef until browned.
4. Add onion and bell pepper to the skillet and cook until softened.
5. Stir in garlic and cook for 30 seconds until fragrant.
6. Add taco seasoning and water, stirring to coat the meat evenly.
7. Mix in diced tomatoes with green chilies, corn, and black beans. Simmer for several minutes.
8. In a mixing bowl, combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, and black pepper until smooth.
9. Spread the beef mixture evenly over the dough layer.
10. Spread the creamy mixture evenly on top of the meat layer.
11. Sprinkle cheddar cheese and Monterey Jack cheese evenly over the casserole.
12. Bake uncovered for 30 to 35 minutes until cheese is melted and golden brown.
13. Let the casserole rest for 10 minutes before slicing and serving.
14. Garnish with parsley, cilantro, or jalapeños if desired.
Notes
Allow the cream cheese to soften before mixing so the creamy layer becomes smooth and spreads evenly.
Drain canned vegetables thoroughly to prevent excess moisture from making the casserole watery.
Let the casserole rest for at least 10 minutes after baking to help the layers set properly before slicing.
