Ingredients

1 pound lean ground beef

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning

1 cup black beans, drained and rinsed

1 cup corn kernels

2 cups enchilada sauce

8 small flour tortillas

2 cups shredded cheddar cheese

2 cups shredded Monterey Jack cheese

1 cup diced tomatoes

1/4 cup chopped green onions

1/2 cup sour cream

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until softened.

3. Stir in minced garlic and cook for 1 minute until fragrant.

4. Add ground beef and cook until fully browned, breaking it apart while cooking. Drain excess grease if needed.

5. Sprinkle taco seasoning over the beef mixture and stir well. Add a splash of water if necessary and simmer for 2 minutes.

6. Stir black beans and corn into the skillet and cook for another 3 minutes.

7. Spread a thin layer of enchilada sauce on the bottom of the baking dish.

8. Add a layer of tortillas, slightly overlapping them to cover the bottom.

9. Spread part of the beef mixture over the tortillas, then spoon enchilada sauce over the top.

10. Sprinkle cheddar cheese and Monterey Jack cheese evenly over the layer.

11. Repeat the layers until all ingredients are used, finishing with a generous layer of cheese on top.

12. Bake uncovered for 25 to 30 minutes until the cheese is melted and bubbling.

13. Remove from the oven and let the casserole rest for 10 minutes before slicing.

14. Top with diced tomatoes, green onions, and sour cream before serving.
