Ingredients

2 pounds beef chuck roast, cut into cubes

2 tablespoons olive oil

1 large yellow onion, chopped

4 cloves garlic, minced

3 cups beef broth

2 tablespoons Worcestershire sauce

2 tablespoons tomato paste

1 cup red wine

2 tablespoons cornstarch

2 tablespoons cold water

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon fresh thyme

2 bay leaves

2 tablespoons butter

2 tablespoons fresh parsley, chopped

6 cups mashed potatoes


Instructions

1. Pat the beef cubes dry with paper towels and season with salt and black pepper.

2. Heat olive oil in a large Dutch oven over medium-high heat.

3. Sear the beef in batches until browned on all sides, then transfer to a plate.

4. Add chopped onions to the pot and cook until softened and lightly golden.

5. Stir in minced garlic and cook for about 30 seconds until fragrant.

6. Add tomato paste and cook briefly to deepen the flavor.

7. Pour in the red wine and scrape the bottom of the pot to release browned bits.

8. Stir in beef broth, Worcestershire sauce, thyme, and bay leaves.

9. Return the beef and its juices to the pot and stir gently.

10. Cover and simmer on low heat for 2½ to 3 hours until the beef becomes fork tender.

11. Mix cornstarch with cold water to create a slurry and stir it into the gravy.

12. Add butter and stir until the sauce becomes glossy and thickened.

13. Remove the bay leaves before serving.

14. Spoon mashed potatoes onto plates and top with the tender beef and rich gravy.

15. Garnish with fresh parsley and serve warm.
