Ingredients
6 large Russet potatoes peeled and cubed
6 tablespoons unsalted butter softened
1 cup sour cream
1/2 cup whole milk
2 cups sharp cheddar cheese shredded
1 cup mozzarella cheese shredded
10 slices bacon cooked and crumbled
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 cup green onions chopped
2 tablespoons melted butter
Instructions
1. Peel the Russet potatoes and cut them into evenly sized cubes. Place them into a large pot and cover with salted water.
2. Bring the potatoes to a boil and cook for 15 to 20 minutes until fork-tender. Drain thoroughly and allow excess steam to escape.
3. While the potatoes cook, fry the bacon in a skillet over medium heat until crispy. Transfer to paper towels and crumble once cooled.
4. Place the hot potatoes into a large mixing bowl and add softened butter. Mash until mostly smooth.
