Ingredients

1 ¾ cups all-purpose flour

¾ cup unsweetened cocoa powder

½ cup brown sugar

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee

¾ cup dark chocolate chips

1 cup unsalted butter

4 cups powdered sugar

3 tablespoons heavy cream

2 tablespoons Irish cream flavoring or Irish cream liqueur

Green and white sprinkles for decoration


Instructions

1. Preheat the oven to 350°F and line a cupcake pan with paper liners.

2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

3. Beat the granulated sugar, brown sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.

4. Slowly stir the hot coffee into the wet ingredients.

5. Gradually combine the dry ingredients with the wet ingredients and mix until just combined.

6. Fold the chocolate chips into the batter gently.

7. Fill the cupcake liners about two-thirds full with batter.

8. Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

9. Allow the cupcakes to cool before frosting.

10. Beat the butter until creamy and gradually mix in the powdered sugar.

11. Add the heavy cream and Irish cream flavoring and beat until fluffy.
