Ingredients
10 ounces frozen spinach, thawed and drained
14 ounces artichoke hearts, chopped
8 ounces cream cheese, softened
1 cup sour cream
1/2 cup mayonnaise
1 1/2 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
3 cloves garlic, minced
1/2 cup onion, finely diced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
Tortilla chips or toasted bread for serving
Instructions
1. Preheat the oven to 375°F and lightly grease a baking dish or oven-safe skillet.
2. Thoroughly drain the spinach by squeezing out as much moisture as possible using paper towels or a clean kitchen towel.
3. Chop the artichoke hearts into small bite-sized pieces and set aside.
4. Heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3 to 4 minutes.
5. Add the minced garlic and cook for another minute until fragrant.
6. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth and creamy.
7. Stir in the spinach, chopped artichokes, sautéed onion, and garlic mixture.
8. Add the mozzarella cheese and Parmesan cheese, reserving a small amount of mozzarella for topping.
9. Season the mixture with salt, black pepper, and red pepper flakes.
10. Transfer the dip mixture to the prepared baking dish and spread evenly.
11. Sprinkle the remaining mozzarella cheese over the top.
12. Bake for 20 to 25 minutes until hot, bubbly, and lightly golden on top.
13. Let the dip rest for 5 minutes before serving.
14. Serve warm with tortilla chips, toasted baguette slices, crackers, or fresh vegetables.
Notes
Always squeeze excess moisture from the spinach to keep the dip thick and creamy instead of watery.
Freshly grated cheese melts more smoothly and creates a creamier texture than pre-shredded cheese.
For an extra golden cheesy crust, broil the dip for 1 to 2 minutes at the end of baking.
