Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 packet taco seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup water

1 cup refried beans

1 cup cooked rice

6 large flour tortillas

2 cups enchilada sauce

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1 jalapeño, sliced

2 tablespoons chopped cilantro

Instructions

1. Preheat the oven to 375°F and lightly grease a baking dish.

2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.

3. Stir in minced garlic and cook for about 30 seconds until fragrant.

4. Add ground beef and cook until browned, breaking it apart while cooking. Drain excess grease if necessary.

5. Stir taco seasoning, salt, black pepper, and water into the beef mixture. Simmer for several minutes until well combined.

6. Add refried beans and cooked rice to the skillet. Stir thoroughly until the filling becomes thick and evenly mixed.

7. Warm the flour tortillas slightly to make rolling easier.

8. Spoon the beef mixture into the center of each tortilla. Add shredded cheese and a small spoonful of sour cream if desired.

9. Fold the sides inward and roll each tortilla tightly into a burrito shape.

10. Place the burritos seam-side down in the prepared baking dish.

11. Pour enchilada sauce evenly over the burritos until fully coated.

12. Sprinkle cheddar cheese and Monterey Jack cheese generously over the top.

13. Add sliced jalapeños if desired for extra spice.

14. Bake for 20 to 25 minutes until the cheese is melted and bubbling.

15. Remove from the oven and let the burritos rest for a few minutes before serving.

16. Garnish with chopped cilantro and serve warm.

Notes

Warm the tortillas before rolling to prevent tearing and help the burritos stay tightly wrapped.

Freshly shredded cheese melts more smoothly and creates a creamier topping than pre-shredded cheese.

For meal prep, assemble the burritos ahead of time and refrigerate them until ready to bake.
