Ingredients

  • 1 baguette or ciabatta, sliced
  • 4 ripe Roma tomatoes, diced
  • 2 cloves garlic, peeled
  • 3 tbsp extra virgin olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 68 fresh basil leaves, chopped
  • 1 tbsp balsamic glaze

Instructions

  1. Prepare the tomatoes – Dice the tomatoes and place them in a bowl. Add salt, pepper, and 1 tablespoon of olive oil. Let sit for 10 minutes.

  2. Toast the bread – Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush with olive oil. Toast for 5–7 minutes until golden.

  3. Rub with garlic – While warm, rub each slice with a peeled garlic clove for extra flavor.

  4. Assemble – Spoon the tomato mixture onto the toasted bread.

  5. Garnish – Sprinkle chopped basil over the top and drizzle with balsamic glaze.

  6. Serve immediately and enjoy!
