Ingredients

2 tablespoons olive oil

1 medium yellow onion finely chopped

3 cloves garlic minced

2 medium carrots sliced

2 celery stalks chopped

1 pound chicken breast or thighs

6 cups chicken broth

3/4 cup orzo pasta

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1 bay leaf optional

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes optional

2 tablespoons fresh parsley chopped

1 large lemon zested and juiced

1 egg optional for avgolemono


Instructions

1. Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery until softened.

2. Add garlic and cook briefly until fragrant.

3. Add chicken, broth, oregano, thyme, and bay leaf. Bring to a boil, then simmer for 15–20 minutes.

4. Remove chicken, shred it, and set aside.

5. Add orzo to the pot and cook until al dente.

6. Return shredded chicken to the soup and stir well.

7. Add spinach if desired and let it wilt.

8. Stir in lemon zest and juice gradually.

9. Temper egg with hot broth and mix back in for a creamy texture if desired.

10. Adjust seasoning, garnish with parsley, and serve warm.


Notes

Use fresh lemon juice for the best flavor and brightness.

Cook orzo just until al dente to prevent mushy texture.

Add extra broth when reheating as the pasta absorbs liquid.
