Ingredients

2 cups peaches peeled and chopped

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg optional

1 tablespoon lemon juice

2 tablespoons cornstarch

1 teaspoon vanilla extract

2 cups pie dough or pastry dough

1 egg

2 cups vegetable oil for frying

1/4 cup powdered sugar


Instructions

1. Peel and chop the peaches, then cook them in a saucepan with sugars, spices, and lemon juice until softened.

2. Stir in cornstarch and cook until thickened, then add vanilla and cool completely.

3. Roll out dough and cut into equal portions.

4. Add filling to each piece, leaving space at edges.

5. Fold, seal edges with a fork, and apply egg wash if needed.

6. Heat oil to 350°F (175°C).

7. Fry pies in batches until golden brown on both sides.

8. Drain on paper towels, cool slightly, and dust with powdered sugar.
