Perfect for quick breakfast ideas, brunch spreads, afternoon snacks, easy dessert recipes, and homemade baked goods, these scones combine sweet berries with rich pastry texture for a comforting and elegant treat everyone will love.

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon zest

1 cup mixed berries

1 cup powdered sugar

2 tablespoons milk or cream for glaze

1/4 teaspoon almond extract optional

Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

3. Add the cold butter and cut it into the flour mixture until coarse crumbs form.

4. In a separate bowl, whisk together the heavy cream, eggs, vanilla extract, and lemon zest.

5. Pour the wet ingredients into the dry ingredients and gently mix until a shaggy dough forms.

6. Carefully fold in the mixed berries without crushing them.

7. Transfer the dough onto a lightly floured surface and shape it into a thick round disk.

8. Cut the dough into wedges and place them on the prepared baking sheet.

9. Chill the scones in the refrigerator for 15 minutes before baking.

10. Brush the tops lightly with cream and sprinkle with coarse sugar if desired.

11. Bake for 18 to 25 minutes or until the scones are lightly golden.

12. Allow the scones to cool slightly while preparing the glaze.

13. Whisk together powdered sugar, milk or cream, and almond extract until smooth.

14. Drizzle the glaze generously over the warm scones.

15. Serve warm and enjoy.

Notes

Keep the butter as cold as possible to create flaky bakery-style layers.

Avoid overmixing the dough because this can make the scones dense instead of soft and tender.

If using frozen berries, add them directly from the freezer to prevent excess moisture in the dough.
