Ingredients

1 cup creamy peanut butter

2 large eggs

1/3 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup chocolate chips

1/4 cup chopped walnuts

Instructions

1. Preheat the oven to 350°F and lightly grease a muffin pan or line it with muffin liners.

2. Add the peanut butter, eggs, maple syrup, and vanilla extract to a mixing bowl and whisk until smooth.

3. Stir in the baking soda, salt, and cinnamon until fully combined.

4. Fold the chocolate chips and chopped walnuts gently into the batter.

5. Divide the batter evenly between the muffin cups, filling each nearly to the top.

6. Sprinkle extra chocolate chips on top if desired.

7. Bake for 15 to 18 minutes or until the tops are lightly golden and set.

8. Allow the muffins to cool in the pan for 10 minutes before transferring to a wire rack.

9. Serve warm or store for later.

Notes

Always stir natural peanut butter thoroughly before using to prevent oily or uneven batter.

Do not overbake the muffins because flourless muffins can dry out faster than traditional muffins.

For extra flavor and texture, sprinkle a few chocolate chips or chopped peanuts on top before baking.
