Ingredients

1 ¾ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 ¾ cups granulated sugar

2 large eggs

1 cup buttermilk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee or hot water

1 cup unsalted butter, softened

4 cups powdered sugar

3 tablespoons heavy cream or milk

Green and white sprinkles for decoration

Instructions

1. Preheat the oven to 350°F and line a cupcake pan with cupcake liners.

2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until fully combined.

3. In another bowl, whisk together the sugar, eggs, buttermilk, vegetable oil, and vanilla extract until smooth.

4. Gradually add the dry ingredients into the wet ingredients and mix gently until combined.

5. Slowly pour in the hot coffee or hot water and stir until the batter becomes smooth and slightly thin.

6. Fill each cupcake liner about two-thirds full with batter.

7. Bake the cupcakes for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.

8. Remove the cupcakes from the oven and allow them to cool completely on a wire rack.

9. In a large mixing bowl, beat the softened butter until creamy.

10. Gradually add the powdered sugar while mixing continuously.

11. Add the heavy cream and mix until the frosting becomes light and fluffy.

12. Pipe or spread the frosting over the cooled cupcakes.

13. Decorate with green and white sprinkles before serving.

Notes

Allow the cupcakes to cool completely before frosting to prevent the frosting from melting.

Use room-temperature ingredients for a smoother batter and softer cupcake texture.

Adding hot coffee instead of water enhances the chocolate flavor without making the cupcakes taste like coffee.
