Ingredients
2 cups rotini pasta
1 1/2 cups chopped dill pickles
1/3 cup pickle juice
1/2 cup mayonnaise
1/4 cup sour cream
1 cup cheddar cheese cubes
1/4 cup finely diced red onion
2 tablespoons fresh dill chopped
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon salt
Instructions
1. Cook the rotini pasta in salted boiling water until al dente, then drain and rinse under cold water to cool completely.
2. Chop the dill pickles into bite-sized pieces and finely dice the red onion.
3. In a large bowl, whisk together mayonnaise, sour cream, and pickle juice until smooth.
4. Add garlic powder, black pepper, and salt to the dressing and mix well.
5. Add the cooled pasta to the bowl and toss until evenly coated.
6. Stir in the chopped pickles, red onion, and cheddar cheese.
7. Fold in the fresh dill gently to distribute flavor evenly.
8. Cover and refrigerate for at least 1 hour to allow flavors to blend.
9. Stir, taste, and adjust seasoning before serving.
Notes
For best flavor, chill the salad longer—up to overnight if possible.
Add a splash of pickle juice before serving to refresh the texture.
Use freshly chopped dill instead of dried for a brighter, fresher taste.
