Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
24 ounces cream cheese, softened
1 cup granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
3 large eggs
1/2 cup Easter pastel sprinkles
1/2 cup white chocolate chips (optional)
1 cup whipped topping or vanilla frosting
2 tablespoons extra Easter sprinkles for topping
Instructions
1. Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper. Lightly grease the parchment paper for easy removal.
2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons sugar until the mixture resembles wet sand.
3. Firmly press the crust mixture into the bottom of the prepared pan and bake for 8 minutes. Remove from the oven and allow it to cool slightly.
4. In a large mixing bowl, beat the softened cream cheese until smooth and creamy with no lumps remaining.
5. Add 1 cup sugar, sour cream, and vanilla extract to the cream cheese and mix until fully combined and silky.
6. Add the eggs one at a time, mixing gently after each addition just until incorporated.
7. Fold in the Easter sprinkles and white chocolate chips carefully using a spatula to avoid color bleeding.
8. Pour the cheesecake batter over the cooled crust and smooth the top evenly.
9. Bake for 30 to 35 minutes or until the edges are set and the center still slightly jiggles.
10. Remove the cheesecake from the oven and allow it to cool at room temperature for 1 hour.
11. Refrigerate the bars for at least 4 hours or overnight for the best texture and easiest slicing.
12. Once chilled, spread whipped topping or frosting over the cheesecake layer and decorate with extra Easter sprinkles.
13. Lift the cheesecake from the pan using the parchment paper, slice into bars, and serve chilled.
Notes
Use softened cream cheese to ensure the cheesecake filling becomes smooth and creamy without lumps.
Avoid overmixing the batter after adding the eggs because excess air can cause cracks during baking.
For perfectly clean cheesecake slices, wipe the knife clean between every cut after chilling.
