Ingredients

2 sheets puff pastry, thawed

2 medium apples, peeled and diced

2 tablespoons unsalted butter

3 tablespoons brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 teaspoon lemon juice

1 teaspoon cornstarch

1 tablespoon water

8 ounces cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 egg yolk

1 tablespoon sour cream or heavy cream

1 large egg

1 tablespoon water

1 tablespoon coarse sugar optional

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Lightly flour a clean surface and unfold the puff pastry sheets. Cut each sheet into equal squares or shape into hearts if desired.

3. In a saucepan over medium heat, melt the butter and add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.

4. Cook the apple mixture for 5 to 7 minutes until the apples soften slightly.

5. Mix the cornstarch with 1 tablespoon water and stir it into the apple mixture. Cook another 1 to 2 minutes until thickened. Let cool completely.

6. In a mixing bowl, beat the cream cheese, granulated sugar, vanilla extract, egg yolk, and sour cream until smooth and creamy.

7. Place the puff pastry pieces onto the prepared baking sheet and gently press down the centers while leaving raised edges.

8. Add a spoonful of cream cheese filling into the center of each pastry.

9. Spoon the cooled apple mixture over the cream cheese layer.

10. Whisk together the egg and remaining tablespoon of water to create an egg wash.

11. Brush the pastry edges lightly with egg wash and sprinkle with coarse sugar if desired.

12. Bake for 18 to 24 minutes or until deeply golden brown and puffed.

13. Remove from the oven and cool slightly on a wire rack.

14. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.

15. Drizzle the glaze over the warm danishes and serve immediately.

Notes

Keep the puff pastry cold while working to ensure flaky layers and proper rising during baking.

Allow the apple filling to cool completely before assembling the pastries to prevent soggy pastry bottoms.

For extra flavor, top the danishes with chopped pecans, caramel drizzle, or a dusting of powdered sugar before serving.
