Ingredients

2 large cod fillets

1 cup panko breadcrumbs

1/4 cup grated parmesan cheese

1/2 cup all-purpose flour

2 large eggs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon dried parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray as needed

1 lemon cut into wedges

1/2 cup tartar sauce or preferred dipping sauce

Instructions

1. Pat the cod fillets completely dry using paper towels to remove excess moisture.

2. Prepare three shallow bowls. Add flour to the first bowl, whisked eggs to the second bowl, and combine panko breadcrumbs, parmesan cheese, garlic powder, paprika, onion powder, parsley, salt, and black pepper in the third bowl.

3. Coat each cod fillet lightly in flour and shake off the excess.

4. Dip the cod into the whisked eggs until fully coated.

5. Press the cod firmly into the breadcrumb mixture so the coating sticks evenly on all sides.

6. Preheat the air fryer to 400°F for 3 to 5 minutes.

7. Lightly spray the air fryer basket with cooking spray.

8. Arrange the breaded cod fillets in a single layer inside the basket without overcrowding.

9. Spray the tops of the fillets lightly with cooking spray or drizzle with olive oil.

10. Air fry the cod for 10 to 12 minutes, flipping halfway through cooking until golden brown and crispy.

11. Check that the fish flakes easily with a fork and reaches an internal temperature of 145°F.

12. Remove the cod carefully from the air fryer and squeeze fresh lemon juice over the top.

13. Garnish with parsley and serve immediately with tartar sauce or your favorite dipping sauce.

Notes

For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs and spray the fillets lightly with cooking spray before cooking.

Avoid overcrowding the air fryer basket because proper airflow helps the coating become evenly golden and crunchy.

Always pat the cod dry before breading to prevent soggy coating and help the crust stick better.
