Ingredients
2 large boneless skinless chicken breasts cut into bite-sized pieces
12 ounces penne pasta
2 tablespoons olive oil
2 tablespoons butter
3 teaspoons Cajun seasoning
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 small onion diced
1 red bell pepper diced
4 garlic cloves minced
2 cups heavy cream
1 cup chicken broth
1 cup freshly grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
1/2 teaspoon red pepper flakes optional
2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil and cook the penne pasta until al dente. Reserve 1/2 cup pasta water before draining.
2. Season the chicken pieces with Cajun seasoning, paprika, salt, and black pepper until evenly coated.
3. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
4. In the same skillet, melt the butter and sauté the diced onion and bell pepper until softened.
5. Add the minced garlic and cook for about 30 seconds until fragrant.
