Ingredients

2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter melted

2 large eggs

1/2 cup orange juice

1 tablespoon orange zest

1/2 cup milk

1 1/2 cups fresh or frozen cranberries

1 teaspoon vanilla extract

2 tablespoons coarse sugar optional


Instructions

1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.

2. In a large bowl, whisk together flour, baking powder, and salt.

3. In another bowl, mix melted butter and sugar until smooth, then add eggs one at a time.

4. Stir in orange juice, orange zest, milk, and vanilla extract until combined.

5. Gradually add dry ingredients into wet mixture and stir gently until just combined.

6. Fold in cranberries carefully without overmixing.

7. Fill muffin cups about 3/4 full and sprinkle coarse sugar on top if desired.

8. Bake for 18–22 minutes until golden and a toothpick comes out clean.

Notes

If using frozen cranberries, add them directly without thawing.
