Ingredients
1 cup cottage cheese
1 ½ cups finely grated carrots
1 cup all-purpose flour
½ cup granulated sugar
¼ cup brown sugar
2 large eggs
⅓ cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
½ cup chopped walnuts or pecans
1 cup powdered sugar
2 tablespoons milk

Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Finely grate the carrots and optionally blend the cottage cheese for a smoother texture.
3. In a large bowl, whisk cottage cheese, eggs, sugar, brown sugar, oil, and vanilla until smooth.
4. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
5. Gradually combine dry ingredients into wet mixture without overmixing.
6. Fold in grated carrots and chopped nuts.
7. Pour batter into prepared pan and spread evenly.
8. Bake for 25–35 minutes until a toothpick comes out clean.
9. Let bars cool completely in the pan.
