Ingredients

  • 2 packs fresh udon noodles (or dried, cooked according to package instructions)
  • 1 lb chicken breast or thighs (cut into bite-sized pieces)
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1-inch ginger (grated)
  • 1/2 cup green peas (or any preferred vegetables)
  • 2 green onions (chopped, for garnish)
  • 1 tbsp sesame seeds (for garnish)

Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes (optional for heat)

Instructions

  1. Prepare the Ingredients – Slice the chicken into bite-sized pieces and toss with cornstarch. Chop the vegetables and loosen the udon noodles in hot water if needed.
  2. Make the Sauce – In a small bowl, mix soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Set aside.
  3. Cook the Chicken – Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the chicken and cook for 4-5 minutes until golden brown. Remove from the pan and set aside.
  4. Stir-Fry the Vegetables – Add another tablespoon of oil to the pan. Toss in the garlic, ginger, and bell peppers. Stir-fry for 2-3 minutes until fragrant. Add the green peas and cook for another minute.
  5. Combine Everything – Return the chicken to the pan and add the udon noodles. Pour the sauce over everything and toss to coat evenly. Stir-fry for another 2-3 minutes until the sauce thickens.
  6. Garnish and Serve – Sprinkle with sesame seeds and chopped green onions. Serve hot and enjoy!
