Ingredients
- 2 packs fresh udon noodles (or dried, cooked according to package instructions)
- 1 lb chicken breast or thighs (cut into bite-sized pieces)
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 red bell pepper (sliced)
- 2 cloves garlic (minced)
- 1-inch ginger (grated)
- 1/2 cup green peas (or any preferred vegetables)
- 2 green onions (chopped, for garnish)
- 1 tbsp sesame seeds (for garnish)
Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes (optional for heat)
Instructions
- Prepare the Ingredients – Slice the chicken into bite-sized pieces and toss with cornstarch. Chop the vegetables and loosen the udon noodles in hot water if needed.
- Make the Sauce – In a small bowl, mix soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Set aside.
- Cook the Chicken – Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the chicken and cook for 4-5 minutes until golden brown. Remove from the pan and set aside.
- Stir-Fry the Vegetables – Add another tablespoon of oil to the pan. Toss in the garlic, ginger, and bell peppers. Stir-fry for 2-3 minutes until fragrant. Add the green peas and cook for another minute.
