2 cups cooked shredded chicken

3 cups cooked white rice

1 can red enchilada sauce

1 cup black beans, drained and rinsed

1 cup corn kernels

1 red bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

2 cups shredded Mexican cheese blend

1 can diced green chiles

2 tablespoons olive oil

1 packet taco seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh cilantro

Instructions

1. Preheat the oven to 375°F and lightly grease a large casserole dish.

2. Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, then cook until softened.

4. Add the shredded chicken, black beans, corn, green chiles, taco seasoning, salt, black pepper, and enchilada sauce. Stir until fully combined.
