Ingredients

1 package cherry gelatin

2 cups boiling water

2 cups chilled Cherry Coke

1 can crushed pineapple, drained

1 cup maraschino cherries, chopped

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 container whipped topping

1/2 cup chopped pecans (optional)

Extra maraschino cherries for garnish


Instructions

1. Add the cherry gelatin to a large mixing bowl and pour in the boiling water. Stir until completely dissolved.

2. Slowly pour the chilled Cherry Coke into the gelatin mixture and stir gently to combine.

3. Fold in the drained crushed pineapple and chopped maraschino cherries evenly throughout the mixture.

4. Pour the mixture into a serving dish or trifle bowl and refrigerate for about 3 to 4 hours until partially set.

5. In another bowl, beat the softened cream cheese until smooth and creamy.

6. Add powdered sugar and vanilla extract to the cream cheese and mix until fully combined.

7. Fold the whipped topping into the cream cheese mixture until light and fluffy.

8. Spread the creamy topping over the chilled gelatin layer evenly.

9. Garnish with extra maraschino cherries and chopped pecans if desired.

10. Chill for at least 1 additional hour before serving cold.


Notes

Make sure the crushed pineapple is fully drained so the gelatin sets properly.

Allow the gelatin layer to partially set before adding the creamy topping to keep clean layers.

For best flavor and texture, chill the dessert overnight before serving.
