Ingredients

2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

3/4 cup milk

1 teaspoon vanilla extract

1 1/2 cups fresh or frozen cherries

1/2 cup all-purpose flour

1/3 cup brown sugar

1/2 teaspoon cinnamon

1/4 cup cold unsalted butter

Instructions

1. Preheat the oven to 375°F and prepare a muffin tin with liners or nonstick spray.

2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.

5. Fold the cherries into the batter carefully to avoid crushing them.

6. In a small bowl, combine the flour, brown sugar, cinnamon, and cold butter for the streusel topping until crumbly.

7. Fill each muffin cup about three-quarters full with batter.

8. Sprinkle the streusel topping generously over each muffin.

9. Bake for 20 to 25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean.

10. Let the muffins cool for 10 minutes before serving.

Notes

Use room-temperature ingredients for a smoother batter and softer muffin texture.

Pat frozen cherries dry before adding them to the batter to prevent excess moisture.

Avoid overmixing the batter because it can make the muffins dense instead of fluffy.
