Ingredients
2 pounds russet potatoes
2 cups shredded cheddar cheese
1 cup sour cream
1/2 cup milk or heavy cream
4 tablespoons butter
2 cloves garlic
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped green onions
1/2 cup bacon bits optional
1/4 cup grated Parmesan cheese optional
Instructions
1. Wash, peel, and cut the potatoes into chunks, then boil in salted water until fork-tender.
2. Drain the potatoes well and allow excess moisture to evaporate before mashing.
3. In a bowl, mix sour cream, milk or cream, melted butter, minced garlic, salt, and pepper.
4. Combine the mashed potatoes with the creamy mixture until fully incorporated.
5. Stir in most of the cheddar cheese and optional bacon bits.
6. Transfer the mixture into a greased baking dish and spread evenly.
7. Top with remaining cheddar cheese and Parmesan cheese.
