14.5 oz diced tomatoes
4 cups beef broth
1 cup water
2 medium potatoes diced
1 cup carrots sliced
1 cup zucchini or okra sliced
1 tsp Cajun seasoning
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp smoked paprika
1/4 tsp cayenne pepper optional
1 bay leaf
salt and pepper to taste
1/2 cup cooked rice optional
2 tbsp parsley chopped for garnish
2 green onions sliced
Instructions
1. Mix breadcrumbs and milk, then combine with ground meat, egg, garlic, onion, parsley, and seasonings.
2. Shape into evenly sized meatballs.
3. Brown meatballs in oil until lightly seared, then set aside.
4. Sauté onion, peppers, and celery until softened.
