Ingredients
6 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
6 slices cooked bacon crumbled
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh herbs
1 tablespoon butter or oil for greasing
Instructions
1. Preheat oven to 300°F (150°C) and place a dish of hot water inside to create steam.
2. Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
3. Cook bacon until crispy and crumble into small pieces.
4. Grease a silicone muffin mold with butter or oil.
5. Add bacon and any optional fillings into each mold cavity.
6. Pour egg mixture into each cavity about 3/4 full.
7. Place mold into a larger dish and fill halfway with hot water.
8. Bake for 25 to 35 minutes until just set with a slight jiggle.
9. Let cool slightly, remove from mold, garnish with herbs, and serve.
