1 medium yellow onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 tablespoon tomato paste
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 1/2 cups beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onions and bell pepper. Cook for about 5 minutes, until softened.
2. Add minced garlic and cook for another minute until fragrant.
3. Stir in the ground beef. Break it up with a spoon and cook until no longer pink and browned evenly.
