Ingredients
500g potato gnocchi
1 cup heavy cream
1/2 cup sun-dried tomatoes chopped
3 cloves garlic minced
1/2 cup grated parmesan cheese
2 cups fresh spinach
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley chopped
Instructions
1. Bring a large pot of salted water to a boil and cook the gnocchi until they float, then drain and reserve a little pasta water.
2. Heat olive oil and butter in a large skillet over medium heat.
3. Add minced garlic and sauté until fragrant, then stir in sun-dried tomatoes.
4. Pour in the heavy cream and let it simmer gently for a few minutes.
5. Add parmesan cheese gradually, stirring until smooth and creamy.
6. Stir in spinach and cook until wilted.
7. Season with Italian seasoning, red pepper flakes, salt, and black pepper.
8. Add cooked gnocchi to the sauce and toss to coat evenly.
9. Adjust consistency with reserved pasta water if needed.
10. Garnish with parsley and extra parmesan, then serve immediately.
