Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
2 cups cremini mushrooms sliced
3 cloves garlic minced
1 cup chicken broth
1 1/4 cups heavy cream
1 cup freshly grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Pat the chicken dry and season with salt, pepper, and Italian seasoning.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Set aside.
3. Reduce heat to medium, add butter, then mushrooms. Sauté until browned, about 6 minutes.
4. Add garlic and cook for 30 seconds until fragrant. Deglaze the pan with chicken broth, scraping the bottom.
5. Stir in heavy cream and remaining butter. Simmer gently, then add Parmesan and stir until smooth.
6. Return chicken to pan, spoon sauce over it, and let simmer for 5 minutes.
7. Garnish with parsley and serve with pasta, potatoes, or crusty bread.
Notes
Use freshly grated Parmesan to prevent the sauce from becoming grainy.
Let the cream come to room temperature to avoid curdling.
Don’t overcrowd the mushrooms—give them room to brown.
