1 pound ground beef (80/20)
1 medium onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 can (14.5 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 1/2 cups beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large pot over medium heat. Add the chopped onions and bell peppers. Sauté for 5-6 minutes until softened, then stir in the minced garlic and cook for another minute until fragrant.
2. Add the ground beef to the pot and break it apart with a spatula. Cook until the meat is browned and no longer pink—about 8-10 minutes. Drain excess fat if needed.
3. Stir in the tomato paste and cook for 2 minutes to caramelize slightly.
