Ingredients
2 large chicken breasts, cut into cubes
1 ½ tablespoons olive oil
3 cloves garlic, minced
1 teaspoon Cajun seasoning
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
Salt and black pepper, to taste
1 tablespoon chopped fresh parsley
8 ounces rotini pasta
2 tablespoons unsalted butter
3 cloves garlic, minced
½ teaspoon Cajun seasoning
½ cup sun-dried tomatoes in oil, chopped
1 ¼ cups heavy cream
½ cup grated Parmesan cheese
2 to 4 tablespoons reserved pasta water
Parmesan shavings, for garnish
Instructions
1. In a bowl, combine chicken with olive oil, garlic, Cajun seasoning, Italian seasoning, smoked paprika, salt, and pepper. Let marinate for at least 15 minutes.
2. Cook pasta in salted water until just under al dente. Reserve ¼ cup pasta water, then drain and set aside.
3. Heat a large skillet over medium-high. Sear chicken in a single layer until golden and fully cooked. Remove and set aside.
4. In the same skillet, reduce heat to medium. Add butter, then garlic. Sauté until fragrant. Stir in Cajun seasoning and chopped sun-dried tomatoes.
5. Pour in heavy cream and let it simmer. Stir in Parmesan cheese until the sauce thickens. Add reserved pasta water as needed.
6. Return pasta and chicken to the skillet. Toss to coat everything in the sauce. Adjust seasoning to taste.
7. Plate and garnish with Parmesan shavings and chopped parsley. Serve immediately.
Notes
Use freshly grated Parmesan for the best melt and flavor.
Don’t skip the pasta water—it helps your sauce bind to the noodles perfectly.
Let your chicken rest after cooking to lock in moisture and prevent dryness.
