2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk (warm)
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 tablespoon olive oil or melted butter
Instructions
1. Thaw spinach completely and squeeze out excess moisture using a clean towel or cheesecloth.
2. In a large saucepan, melt butter over medium heat. Whisk in flour to form a roux and cook for 1-2 minutes.
