Ingredients
1 package (3.4 oz) instant pistachio pudding mix
1 can (20 oz) crushed pineapple with juice
2 cups mini marshmallows
1 container (8 oz) Cool Whip, thawed
1/2 cup chopped pistachios (plus extra for garnish)
1/4 cup chopped pecans (optional)
1/2 cup shredded coconut (optional)
Maraschino cherries for garnish (optional)
Instructions
1. In a large bowl, combine pistachio pudding mix and crushed pineapple (with juice). Stir until fully dissolved and starting to thicken.
2. Gently fold in the Cool Whip until the mixture is smooth and fluffy.
3. Stir in mini marshmallows, and if using, add shredded coconut and chopped pecans.
4. Cover and refrigerate for at least 2 hours to allow flavors to meld and marshmallows to soften.
5. Before serving, sprinkle with chopped pistachios and top with maraschino cherries if desired. Serve chilled.
Notes
Always include the pineapple juice—don’t drain it—as it activates the pudding mix.
For best texture, wait to add the pistachios until just before serving.
Make ahead a day early, but garnish at the last minute to keep toppings fresh and crunchy.
