Description

These homemade zeppole are light, golden, and dusted in powdered sugar. Made from a simple choux-style dough, they fry up perfectly crisp on the outside and tender on the inside. Ideal for celebrations or anytime you need a quick, indulgent treat.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting
  • Neutral oil (vegetable, canola, or peanut) for frying

Instructions

  1. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and stir in flour all at once. Stir vigorously until a dough forms and pulls away from the sides.
  3. Cook the dough for 2–3 minutes, then transfer to a mixing bowl and let cool for 5 minutes.
  4. Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract.
  5. Heat 2 inches of oil in a deep pot to 350°F (175°C).
  6. Drop tablespoon-sized scoops of dough into hot oil. Fry in batches for 4–5 minutes, turning until golden and puffed.
  7. Transfer to paper towels to drain. Dust with powdered sugar while warm.
