Description

Juicy, vibrant, and packed with smoky flavor, these Chicken Kabobs are marinated to perfection with a mix of olive oil, lemon juice, garlic, and spices. Grilled to golden-brown with colorful vegetables, they’re a quick and satisfying choice for dinner, BBQs, or meal prep.

 



Ingredients

For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon honey or brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

For the Kabobs:

  • 1.52 lbs boneless, skinless chicken breasts or thighs, cubed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • Fresh parsley (optional, for garnish)
  • Lime wedges (to serve)

Instructions

  1. In a bowl, whisk together olive oil, soy sauce, lemon juice, honey, garlic, paprika, cumin, oregano, salt, and pepper.
  2. Add cubed chicken and toss to coat. Cover and refrigerate for at least 30 minutes (ideally 2–4 hours).
  3. While marinating, chop vegetables into 1.5-inch pieces.
  4. If using wooden skewers, soak them in water for 30 minutes.
  5. Thread chicken and vegetables onto skewers, alternating pieces.
  6. Preheat grill to medium-high and oil grates.
  7. Grill kabobs for 10–12 minutes, turning every 2–3 minutes, until chicken is fully cooked (165°F/74°C).
  8. Remove from grill, let rest for a couple minutes, garnish with parsley, and serve with lime wedges.
