Ingredients
1 9-inch pie crust
1 1/2 cups pecan halves or chopped pecans
1 cup semi-sweet chocolate chips
1 cup brown sugar
1 cup light corn syrup
3 large eggs
4 tablespoons unsalted butter, melted and cooled
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt
Instructions
1. Roll out the pie crust and fit it into a 9-inch pie pan. Crimp the edges and refrigerate while making the filling.
2. Preheat the oven to 350°F (175°C).
3. In a large bowl, whisk together the eggs, brown sugar, corn syrup, melted butter, vanilla extract, and salt until smooth.
4. Stir in the chocolate chips and chopped pecans. Optionally reserve a few whole pecans for decorating the top.
5. Pour the filling into the chilled pie crust and spread evenly. Arrange reserved pecans on top if using.
6. Bake for 50 to 60 minutes, until the center is slightly jiggly and edges are set. Cover the crust edges with foil if they brown too quickly.
