Ingredients

For the Chicken Stir-Fry:

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, chopped
  • 1 large carrot, sliced
  • 2 tablespoons vegetable or sesame oil
  • 2 tablespoons chopped green onions (for garnish)
  • 1 teaspoon sesame seeds (optional)
  • Fresh parsley or cilantro (optional)

For the Teriyaki Sauce:

  • 1/4 cup soy sauce (low-sodium)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch + 2 tablespoons water
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. In a bowl, whisk soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and chili flakes.
  2. Stir in cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to thicken sauce. Set aside.
  3. Chop chicken, bell pepper, and carrot into bite-sized pieces.
  4. Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
  5. Add chicken and cook for 5–7 minutes, until golden and cooked through. Remove and set aside.
  6. Add another tablespoon of oil to the pan. Add carrots and bell pepper, stir-fry for 4–5 minutes.
  7. Return chicken to the pan, pour in teriyaki sauce, and toss to coat evenly.
  8. Simmer for 2–3 minutes until sauce thickens and clings to chicken and veggies.
  9. Garnish with green onions, sesame seeds, and fresh herbs. Serve hot.
