Ingredients
1 pound ground beef
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1/2 small onion, finely chopped
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
2 cups shredded cheddar cheese
1 (32 oz) bag frozen tater tots
Chopped parsley (optional, for garnish)
Instructions
1. In a large skillet, brown the ground beef over medium heat. Add chopped onion halfway through cooking. Drain excess fat.
2. Lower heat and stir in the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and black pepper. Simmer for 2–3 minutes.
3. Preheat oven to 375°F (190°C).
4. Spread the beef mixture evenly in a 9×13-inch baking dish. Sprinkle 1 cup of cheddar cheese over the beef.
5. Arrange frozen tater tots in a single layer over the cheese.
6. Bake for 35–40 minutes, or until the tots are crispy and golden.
7. Remove from oven, top with the remaining 1 cup cheddar cheese, and bake for 5–10 more minutes until melted and bubbly.
8. Let rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.

Add 1 to 1½ cups of frozen mixed vegetables for a more complete, colorful meal.
You can easily swap the cream of mushroom soup for cream of chicken or celery.
