Description

It’s a quick dinner idea, great for Taco Tuesday or a weekend snack, and a satisfying fusion of taco and pizza night. Whether you’re looking for easy dinner recipes, crowd-pleasing food ideas, or fast comfort meals, this one hits all the right notes.

Ingredients

2 6-inch flour tortillas

1/2 cup refried beans

1/2 cup cooked ground beef

1 tablespoon taco seasoning

1/4 cup enchilada sauce

1/2 cup shredded Mexican cheese blend

1/4 cup diced tomatoes

2 tablespoons sliced green onions

1 tablespoon chopped red onion (optional)

1 tablespoon vegetable oil (for frying)

Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain grease, then add taco seasoning with a splash of water. Simmer for 2–3 minutes until thickened.

2. Meanwhile, crisp the tortillas by frying in oil until golden on both sides or baking at 400°F (200°C) for 5–7 minutes per side.

3. Place one tortilla on a baking sheet. Spread refried beans over it, then layer the seasoned beef evenly on top.

4. Add the second tortilla over the beef. Spread enchilada sauce across the top as the pizza sauce layer.

5. Sprinkle shredded cheese generously over the sauce layer.

6. Bake at 400°F (200°C) for 8–10 minutes, or until the cheese is melted and bubbling.

7. Remove from the oven and let rest for 1–2 minutes.

8. Garnish with diced tomatoes, green onions, and red onion (if using).

9. Slice into quarters or eighths and serve hot.

Notes

For the best texture, let tortillas cool on a rack after crisping to stay crunchy.

Don’t add fresh toppings before baking—add them after to keep their texture and color.

Mixing a little enchilada sauce into the beans adds extra flavor and creaminess.
