Ingredients
For the Chicken:
- 2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- Salt & pepper, to taste
- 2 tbsp cornstarch (optional, for thickening)
For the Sauce:
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh minced ginger (or 1/2 tsp ground ginger)
- 1/2 cup ketchup
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tbsp sesame oil (optional)
Optional Add-ins:
- 1 red bell pepper, chopped
- 1 cup pineapple chunks
- Sesame seeds & green onions, for garnish
Instructions
- Season chicken pieces with salt and pepper. Optional: Lightly brown in a skillet.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, ginger, ketchup, vinegar, and sesame oil.
- Add chicken to crockpot. Pour sauce over the top. Add bell pepper and pineapple chunks if using.
- Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
- If desired, mix cornstarch with water and stir into crockpot during the last 30 minutes to thicken sauce.
- Garnish with sesame seeds and green onions before serving.
