Ingredients

1 ¾ cups all-purpose flour

1 cup granulated sugar

3 large eggs

¾ cup unsalted butter, softened

½ cup milk

2 teaspoons baking powder

¼ teaspoon salt

2 teaspoons pure vanilla extract

1 ½ cups heavy whipping cream

⅓ cup powdered sugar

1 ½ cups fresh strawberries, sliced (plus extra for garnish)


Instructions

1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

2. In a large bowl, beat the butter and sugar together until pale and fluffy.

3. Add eggs one at a time, mixing after each. Stir in vanilla extract.

4. In another bowl, whisk together the flour, baking powder, and salt.

5. Add the dry mix to the wet ingredients in three parts, alternating with the milk. Mix until just combined.

6. Divide batter between the pans. Smooth the tops and bake for 25–30 minutes, or until a toothpick comes out clean.

7. Let the cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.

8. In a chilled bowl, whip the heavy cream with powdered sugar until stiff peaks form.

9. Slice strawberries and set aside some for garnish.

10. Place one cake layer on a plate. Spread with whipped cream and a layer of sliced strawberries. Add second cake layer. Top with more whipped cream and decorate with reserved berries.

11. Chill for at least 30 minutes before serving to let flavors meld and cream set.
