Ingredients

1 cup unsalted butter, melted

1 1/2 cups granulated sugar

1/2 cup brown sugar, packed

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon salt

16 ounces cream cheese, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 box (3 ounces) strawberry gelatin

1/2 cup boiling water

1/2 cup cold water

1 1/2 cups heavy whipping cream

1/4 cup powdered sugar

3/4 cup Golden Oreos, crushed

2 tablespoons freeze-dried strawberries, crushed

2 tablespoons butter, melted

Whipped cream, for garnish

Fresh strawberries, halved, for garnish


Instructions

1. Preheat oven to 350°F (175°C), line a 9×13 dish with parchment paper, and lightly grease it.

2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar.

3. Add eggs and vanilla extract, mix until smooth.

4. Sift in flour, cocoa powder, and salt. Stir until just combined.

5. Spread batter in the pan and bake for 22–25 minutes. Cool completely.

6. Beat cream cheese and sugar until fluffy, then add egg and vanilla. Mix until smooth.

7. Pour cheesecake mixture over cooled brownie layer. Bake at 325°F for 20–22 minutes. Let cool, then refrigerate for 1 hour.

8. Dissolve strawberry gelatin in boiling water, then add cold water. Let cool.

9. In another bowl, whip heavy cream with powdered sugar until stiff peaks form.

10. Gently fold cooled gelatin into whipped cream. Spread over cheesecake layer. Chill 3 hours.

11. Mix crushed Oreos, freeze-dried strawberries, and melted butter for crumble. Sprinkle over mousse.

12. Garnish with whipped cream and halved strawberries. Slice and serve chilled.


Notes

Make sure each layer is fully cooled before adding the next to prevent melting.
